Ecology program participants with a Leccinum insigne mushroom (aspen bolete). This mushroom is one that is considered edible for some people, while some people report having upset stomachs after eating them. We think that many people undercook these mushrooms—we tend to boil them first, then fry them. Aspen boletes are plentiful in western Colorado in July and August.
